Nestor Lasso and his brother Adrian are third-generation coffee farmers, representing the growing youth movement in coffee-producing countries which focuses on quality and environmental sustainability. Nestor’s passion for coffee and desire to improve his own family’s quality of life have pushed him to pursue a transformative change of the family business, shifting his focus to producing micro-lots and exploring innovative post-harvest processing.

 

Finca el Diviso is a collaboration project between Nestor Lasso and his neigbour Jhoan Vergara from Las Flores Farm, born out of an ambition to cultivate and process higher scoring coffees.The 16 hectare farm is situated at 1800 m.a.s.l. in the Huila region, and has the perfect growing conditions for speciality coffee, where currently 13 different varieties are grown.

 

This anaerobic coffee has undergone a double fermentation process: the harvested cherries are hand picked so only the ripe beans make it to the next step, then they undergo a 20 hour fermentation process, after which they are separated into smaller batches and fermented for a further 16 hours. Once fermentation is complete, they are depulped, washed, and submerged in water and leachate from previous harvests for a final 18 hours, before being mechanically dried. 

 

The result is a coffee that is complex and fruity with a juicy watermelon note.
