Sidra is a hybrid created from the Bourbon and Typica lineages, combining Bourbon’s body and sweetness with Typica’s clarity and acidity. At El Diviso, this variety is treated as a flagship: planted at high elevation, shaded under native and fruit trees to encourage slower maturation, which in turn enhances sugar concentration and complexity.
