Grown at 2,150-2,250 m.a.s.l. in the Gedeb district of Yirgacheffe, this heirloom-variety microlot is produced by Ephtah Coffee, founded by Wubit Bekele. Cherries from farmers local to Halo Beriti are sorted and floated to remove unripe and low-density fruit, then fermented in sealed barrels for 9 days inside a greenhouse. They are then dried on traditional African raised beds for 12-15 days.
Ephtah's privately owned processing site in Lalesa is shaded by indigenous Enset ("false banana") trees, which support local biodiversity and soil health.
